Scones

Mike & I love fried foods. One of my favorites of the fried food section is scones. There are many recipes out there but this is the one we use and it's good and easy.

4 C Flour
1 tsp Salt
1/2 C Sugar
2 tsp Baking Powder
2 C Milk

Mix dry ingredients, add milk. Mix until you get a good dough. (I usually have to add a little flour until it's not too sticky). Fry in hot oil.

L & L Katsu Chicken

First of all, if you haven't been to an L & L, you should go try it. It's a Hawaiian Barbecue restaurant. Second, they make the best breaded chicken. Not only that, but they make some amazing katsu sauce. It's full of flavor and for some reason, I can't get the sauce to thicken, but it seems like everyone else can.

L & L Katsu Sauce
1/2 cup Worcestershire sauce
1 cup ketchup
1 cup sugar
2-1/2 cups water
1/3 teaspoon salt
1/4 teaspoon chicken bouillon
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
2-3 dashes Tabasco sauce

Combine all ingredients and bring to a boil. Add cornstarch dissolved in water to thicken. Chill & serve. (Mike & I usually half the recipe.)

L & L Chicken Katsu Batter
2 eggs
3/4 cups cornstarch
1/4 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1 cup water
15-20 chicken, about 4 pounds, boned and skinned
1 pound panko

Open the chicken and flatten. Combine first six ingredients. Coat chicken in the egg batter, then the panko. Fry in oil, maximum 325 degrees (Mike & I fry at 292 degrees) until brown and crispy.

Cut chicken into strips and serve with sauce. Serves 7-10. (Mike & I usually half this recipe too.)

Fluffy French Toast


This is one of Mike's favorites. For example, last Saturday was Valentine's Day. Every day that week, Mike would say, "Who knows what happens on Saturday?!" Each time he got the obvious answer, "Valentine's Day." He'd smile and say, "Yes, but it's French Toast Day!" I guess Saturday has become our new French Toast day.

  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 pinch salt
  • 3 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon white sugar
  • 12 thick slices bread (we use our Sweet Bread)
  1. Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.
Mike & I love to eat these with cool whip and fruit. We also usually half the recipe. Oh, and don't forget to follow the instructions, not that you would. Mike & I have just found that things tend to mix better when you do like the instructions say. Throwing all the ingredients in at once also works, there's just a few lumps of flour.
